"In search of authentic terroir champagnes, I would like the soil I inherited to give the best of itself to the vineyards. Everything rests on the living thing that has been able to organize itself in symbiosis and synergy in order to co-exist and co-evolve. The soil nourishes the vine and the vine creates the soil. The soil and the plant are one. Taking care of the plant takes care of the soil and vice versa.
