"In search of champagnes from authentic terroirs, I would like the soil I inherited to give the best of itself to the vines. Everything rests on the living being that has been able to organize itself in symbiosis and synergy in order to co-exist and co-evolve. The soil nourishes the vine and the vine creates the soil. The soil and the plant are one. Taking care of the plant takes care of the soil and vice versa. Life is maintained by the energies that pass through individuals: calories, biochemical reactions, electricity, magnetism, cosmic and telluric energies... My role as a winemaker is to maintain these bioenergetic relationships between the soil and the vine so that the wine is the spokesperson of the terroir and of the vital energies for the pleasure of the body and the spirit."
