The maison Georges Laval, Rècoltant-manipulant of Cumières, has since 1971 firmly pursued a philosophy of completely organic agriculture. The owned vineyards fall within the Premier Cru classification (2.5 hectares). About one hectare belongs to the "Les Hautes Chèvres" parcel, a vineyard dating back to 1930 and one of the oldest in the entire Cumières terroir.

Made from a selection of well-ripe Chardonnays, fermented and aged for 8 months in oak barrels, Les Chênes remain on the lees for 3 and a half years. The cuvée Les Chênes is a great Champagne Blanc de Blancs, Brut Nature (with no added sugar), characterized by finesse, complex structure, mineral, saline persistence.
