The origins of this wine are controversial: a first theory maintains that it originates from Burgundy and that its name comes from the village of the same name in this region. Another theory maintains that this wine would have originated in the Jerusalem area, in fact it gives its best in clayey, calcareous and tuffaceous territories; In this case the name would derive from the Hebrew word Shahar Adonay and would have come down to us with the return of the Crusaders. For a long time it was thought to be a variety of Pinot Blanc. In reality, it is a spontaneously born cross between Pinot Noir and Gouais Blanc. France and Italy are the producers par excellence of this wine, in addition to them and there are also large and cultivations in: United States, Chile, Argentina, South Africa, Australia, New Zealand.
